Bar Leather Apron

Jason Diaz has been bartending for the past decade, starting as a part timer while getting his biochemistry degree in Seattle. He quickly fell in love with the craft and with a fascination of mezcal, found himself in Oaxaca City, Mexico helping friends open restaurant El Destilado.

In Hawaii since 2019, Jason has fallen in love again, this time with the island of Oahu and the nature that surrounds us. After working at Restaurant Senia, Jason joined Bar Leather Apron to further his craft and work under JP. On his days off you can find Jason surfing the waters of Oahu or hiking on a remote trail on the Koolaus.
